celebrated second christmas with my crush yesterday which meant putting on cute outfits, exchanging gifts, and cooking ALL THE FOOD. seriously, all of it. we have been talking about how we wanted to celebrate and what we wanted to eat for a while now (there was a google doc menu and everything) and all of the food turned out even better than I hoped it would. here’s what we ate, with the recipes we used:

cranberry apple chutney (modified this recipe to be less sweet and a little spicy)
baked rosemary-peppercorn cashew cheese (combined this, this, and this)
pecan and almond butter mushroom pate with red peppers

roasted acorn squash with mixed greens, toasted squash seeds, and a flax oil vinaigrette

green bean casserole with fried onions
cheesy potato casserole (a family recipe of my crush’s that we vegainzed)
seitan roast with leek and shiitake stuffing  (homemade tofurky!)
nutritional yeast gravy 

steamed plum pudding with a burbon butter sauce (these two recipes combined and veganized)

also, homemade eggnog (with and without whiskey)!
